Delicious 2 Ingredient Pumpkin Cake with Cider Glaze

Pumpkin Cake with Cider GlazeI have been having fun trying different recipes lately and have been doing a lot of baking. I have seen this recipe for the 2 Ingredient Pumpkin Cake for quite some time and decided to give it a try. It was so delicious that I had to share in case some of you have not seen it before.

This cake is so EASY to make and even if you are not a fan of Pumpkin Pie (like myself) you may like this – just like I do. It was a big hit at my dinner party tonight and not only did the adults like it, but all the kids did too.

Ready for how simple this recipe is? Ok here ya go….

Pumpkin Cake:

  • 1 Box of Yellow Cake Mix
  • 1 Can (15 ounces) Pumpkin Puree – NOT filling

Apple Cider Glaze:

  • 3 Tbsp Apple Cider
  • 1 1/2 Cups Powdered Sugar
  • 3/4 tsp Pumpkin Pie Spices

In a large bowl mix together the Yellow Cake Mix and Pumpkin Puree using a hand mixer until well combined. The batter will be thick, but mixes together nicely.

Pour the batter into a 8″ x 10″ glass casserole dish. Some say to use a 7″ x 11″, but I do not own that size and the size I used was just fine. Bake your cake at 350 for 25 minutes or until set – be careful to not over bake it.

Take it out of the oven and let it cool for a bit and while you wait you can make your Cider Glaze.

In another bowl combine the Cider, Powdered Sugar and Pumpkin Pie Spices.  Stick in the microwave for about 40 seconds and then pour over your semi cooled cake.

I made my cake the night before and let it sit out covered and it was so yummy. I have also read you can eat it warm and some have even made extra glaze to have on the side. I think it had plenty of the glaze and the cake comes out super moist. I really love this and will no doubt be making it again and it is one for my special recipe book. Yup it’s a keeper!!
