Delicious Coconut Cake Recipe – Quick and Easy

Love the taste of Coconut and looking for a Cake recipe that is Quick & Easy, well then I have it for you right here. This Coconut Cake is absolutely  Delicious and it could not be any easier to make.

So my Sista Peep brought over this dessert recipe to try out after our Taco Stroganoff Dinner the other night – I know a weird dessert to follow a Mexican Dish, but who cares – dessert is dessert right? Personally I love Coconut so I was really excited to try it out.

So while she was cooking up the dinner I made the cake and of course documented it step by step in case it was good enough to share and Guess what? It was !!

Here is what you will need for this Coconut Cake Recipe:

  • 1 Box of White Cake Mix
  • 3 Egg Whites
  • 2 Tbsp Vegetable Oil
  • 1 1/3 Cups Milk
  • 2 1/2 Cups Shredded Coconut
  • 1/2 Cup of Cream of Coconut for batter
  • 1 Cup of Cream of Coconut for Cake Top
  • 1 Tub of Cool Whip

Note: I used 1 15 ounce can of Cream of Coconut and it was just enough for this recipe.  You can usually find this by the Drink mixes in your local grocery store.

Preheat your Oven to 350

In a mixing bowl add in your White Cake Mix, then add in your Egg Whites, Vegetable Oil and Milk

then add in 1/2 Cup of Cream of Coconut and 1 Cup of Shredded Coconut. Mix with your mixer until all mixed up.

Spray a 13′ x 9″ Baking Dish and pour in your batter !! So far so EASY right?

Bake your cake at 350 for approx 20-25 Minutes or until your toothpick comes out clean.

As soon as you remove the cake from the oven Poke holes all over the cake using a skewer, knife or fork. Then pour 1 Cup of Cream of Coconut over the top.

Now let the cake cool down.

Once the Cake is Cool spread the Cool Whip on the top and then sprinkle with the remaining Shredded Coconut.

Put the Cake into the fridge for a few hours or even overnight.

We ate the Cake after a couple of hours and it was AMAZING !!

The Cake was super moist with just enough Coconut Flavor inside – I could just eat the cake part alone. You can also use this same recipe and make it into Cupcakes and even a Layer Cake as well.

As far as the kids go – well Coconut is an acquired taste and I find not a lot of kids like it. My son liked this cake, but my daughter would not try it. Us adults – well that was another story, we had no problems eating this up. So keep that in mind if you are making this for a party.

This Coconut Cake would be a perfect addition for a Luau Party don’t ya think?

    I made this the other day and it is wonderful!! Very moist and light.
    the only thing I might do is to add some coconut flavoring to the cake when I am mixing it up next time.
