Pumpkin Pie Bars – Great Fall Treat

Pumpkin Pie Bar RecipeI baked up these Pumpkin Pie Bars the other day for my hubby and son who are big fans of anything with Pumpkin in it, they said they are yummy so of course I had to share.

I have a pile of Sweet Pumpkin Recipes I have been piling up for years, cut from magazines, printed from online and in cookbooks I have had forever. I promised my boys that I would bake a bunch of them up this year. So this was another sweet treat from that pile and when they are worth sharing that is what I do.

So here is another recipe perfect for fall and for those who love the taste of Pumpkin Pie in bar form.

Pumpkin Pie Bar Recipe:

  • 1 1/3 Cups Flour
  • 1/2 Cup Brown Sugar
  • 3/4 Cup Sugar, divided
  • 3/4 Cup (1 1/2 sticks) Cold Butter
  • 1 Cup Old Fashioned Quick Cooking Oats
  • 1/2 Cup Pecans, chopped
  • 1 pkg ( 8 ounce) Cream Cheese, softened
  • 3 Eggs
  • 1 Can (15 ounces) Pumpkin
  • 1 Tbsp Pumpkin Pie Spice

Preheat your oven to 350

Line a 13 x 9 inch baking pan with tin foil. Tip: Turn the pan over and lay the foil over it to form the shape. Then when you turn it back it will fit right in nice and easy. Also make it longer so you can create handles to help you pull it out of the pan after they are baked. You will also want to spray or grease the foil as well.

Next Mix Flour, Brown Sugar and a 1/4 Cup of Sugar in a medium bowl, cut in the Butter with a pastry blender or two butter knives until your mixture resembles coarse crumbs. Stir in your Oats and Pecans.

Reserve 1 Cup of that mixture and set aside. Press remaining into the bottom of the pan and then bake that for 15 minutes.

Meanwhile beat together Cream Cheese, remaining 1/2 Cup Sugar, Eggs, Pumpkin and Pumpkin Pie Spices with a mixer until blended.

Pour that over your baked crust and sprinkle the top of that with your remaining crumb mixture you set aside.

Bake approx 25 minutes.

When done life the foil using your handles and let your bars cool completely before cutting.

You can cut them into 24 Bars and then enjoy.

They are not over powering with Pumpkin flavor, but just enough to give you the taste of fall.

Great dessert to add to your Fall or Halloween Party Table – the kids will LOVE them.
