How to Make Pink Lemonade Cupcakes

Here is a SWEET Cupcake recipe that is perfect for summertime – Pink Lemonade Cupcakes. Serve these up at your next Party, Baby Shower or BBQ and refresh your guests with the taste of Pink Lemonade in cupcake form.

How pretty are these Pink Cupcakes? I have to tell you they are very sweet and you can totally taste the Pink Lemonade. They are super EASY to make and I am going to show you how I did it right here so you can make them too. I know I am too nice right? Yeah I think so too – lol

Here is what you will need for your Pink Lemonade Cupcakes:

• 1 Package White Cake Mix
• 1 Cup Water
• 3 Egg Whites
• 1/3 Cup plus 1/4 Cup thawed Pink Lemonade from concentrate
• 2 Tbsp Vegetable Oil
• 5 – 8 drops of Red Food Coloring
• 4 Cups Powdered Sugar
• 1/3 Cup (2/3 stick) Butter softened
• Lemon Slice Candies (optional)
• Straws (optional)
• Pink & White Sugar Sprinkles (optional)

Preheat your oven to 350

Line your Cupcake Pans with liners – original recipe says you can make 22 cupcakes – but I made 18.

Beat your cake mix, water, egg whites, 1/3 cup pink lemonade concentrate, oil and about 4 to 6 drops of red food coloring in a large mixing bowl. Then spoon your batter into you cupcake liners and bake for about 18 to 22 minutes.

Let them cool, meanwhile you can make your frosting….

Beat your powdered sugar, butter and1/4 cup of pink lemonade concentrate add in 1 to 2 drops of red food coloring – that is it, now you are ready to frost and decorate !!

I added some Pink and White Sugar Crystals to the top for some sparkle, then I took a bendy straw and cut it at both ends and stuck it into the cupcake, I also added some Lemon Slice Candies for effect and then placed my cupcakes into Wilton Baking Cups.

and they they are Ready to be served !!!

It just so happened that my son had a friend over so the boys enjoyed some pink cupcakes – lol

How cute and EASY was that? I love how these turned out and think they would be great at any party.
